They are heavenly, but certainly not crispy. I find that the consistency of the pumpkin makes it nearly impossible to produce crispiness in a recipe using it. But let me know if you come up with something. ;-)<BR/><BR/>Thanks for the recipes! I am particularly interested in using the pasta one with tomatoes. Despite all the talk of chewiness, however, what I really would like to make is a crisp pumpkin cookie.
